Carrot and Orange Muffins

These have to be my kids' absolute all-time favourite muffins! 

Ingredients:

2 cups flour

2 tsp baking powder

1 tsp mixed spice

1 tsp baking soda

1/2 cup brown sugar

1 T golden syrup

75g butter

1/4 cup milk

3 eggs

1 1/4 t vanilla essence

150 ml oil

2 2/3 firmly packed grated carrot (I use 3 large or 4 medium carrots)

finely grated zest of 1 orange

1/2 cup sultanas

 

Preheat oven to 180 C. Place baking cups in muffin tray. Sift flour, baking powder, spice and baking soda into a large bowl. Stir in brown sugar. Make a well in the centre.

Melt the golden syrup and butter together over a low heat and leave to cool. Then stir in milk, eggs, vanilla and oil and whisk well. Pour into the well. Fold until just combined - the batter should be lumpy. Stir in the carrot, orange zest and sultanas. It will look like too much carrot - but it's not! 

Divide mixture between baking cups. Bake for approx. 30 minutes - or until they start smelling yummy! Transfer to a wire rack to cool. 

When cooled completely, store in air-tight container or pop into ziplock bags in the freezer. Makes 24-26 muffins.
