Chocolate Weetbix Bliss Balls

I've made more than a few bliss balls in my time, but this latest incarnation has been by far the most popular yet with my kids. I'm sure you'll love them too!

This recipe uses prunes rather than the usual dates. I find that prunes work well in most baking that calls for dates, and they have less than half the sugar of dates but are still beautifully sweet. 

INGREDIENTS

Makes approx. 17 bliss balls

1 cup pitted prunes, roughly chopped

4 Weetbix, crumbled

2 tablespoons cocoa powder

1 teaspoon vanilla essence

2 tablespoons runny honey

1/3 cup desiccated coconut, plus extra for coating

 

 METHOD

1. Place the prunes in a heatproof bowl and cover with boiling water. Stand for 2 minutes to soften, then drain. Place the prunes, Weetbix, cocoa, vanilla, honey, and coconut in a food processor. Blitz until well combined.

2. Place extra coconut in a small, shallow bowl. Roll tablespons of mixture into a ball in your hands, and roll in the coconut to lightly coat. Place bliss balls on a plate or in an airtight container.

3. Refrigerate for 20 minutes to firm up, then serve. These will last a long time in the fridge in an airtight container, and also freeze well in a reusable ziplock bag.
