Lemon Bliss Balls

These scrummy lemony bliss balls are just the thing for a school holiday snack. You could even get the kids involved in rolling out the balls! I found this recipe on kiwi Facebook blog "The Bubble". You can see one in my cricket lunch below with some cute eye food picks in it!

 

You will need:

1 cup cashews

1 cup coconut (I used desiccated)

1 lemon - grated zest and juice

1/2 tsp vanilla essence

2 Tbsp honey

Blitz everything in a food processor until the mixture just comes together. Roll into balls and place in the fridge to harden up a little. Store in an airtight container in the fridge or freezer. Feel free to add more lemon zest if you want them more zingy!
