Popcorn Pick 'n Mix Bars

Forget shop-bought muesli bars with dubious 'health' claims! These no-bake popcorn bars are loaded with goodness and - best of all - they've been a massive hit with the whole family here at the Lunchbox Palace! 

I find the very quickest and easiest way to pop popcorn is in a lidded Pyrex dish in the microwave. Just blast it on high power until all the corn is popped. No need to add any oil or butter. 

The seed mix is totally up to you. This is a very forgiving recipe, so just use whichever seeds you like best. The quantities are only a rough guide and you can add more or less seeds as you wish.

 

INGREDIENTS

3 1/2 to 4 cups popped popcorn (natural store-bought popcorn, or pop your own at home)

1/2 Cup pumpkin seeds (toast them in a dry pan for more flavour if you like)

1/4 Cup sesame seeds

1/4 Cup sunflower seeds

1 Tablespoon chia seeds

1 Tablespoon flaxseeds (linseeds)

3 Tablespoons honey

1 Tablespoon coconut oil

 

HOW TO MAKE THEM:

Line a Swiss roll tin (28cm x 18cm) with baking paper or tinfoil.

Place the popcorn and seeds in a large bowl and mix thouroughly.

Place honey and coconut oil in a small saucepan over medium heat on the stove. Stir while they melt together, then boil for a minute or two. The mixture will be very frothy. 

Tip the honey mixture into the popcorn and seed mix, and stir very well until everything is coated in the honey, and the seeds are evenly distributed throughout the mix. 

Tip mixture into the lined tin and press down firmly with the back of a spoon. Place in the fridge until it has cooled and set. 

Tip out, and drizzle with melted chocolate if you like. Cut into bars. They will probably break into uneven pieces - but that's part of the fun of them!  Store in an airtight container in the fridge.
